Sweet vs Salty Breakfasts

This week has been pretty stressful and it’s only Wednesday. Boo.
It’s been a weird week and maybe I’m causing it by changing up my breakfasts.
For the first time in I don’t know how long, I wasn’t in the mood for my usual protein pancake. I was in the mood for something savory and salty. If you know me at all, you know I’m all about sweet breakfasts so this should’ve been the first sign that the week was going to be a mess.
I made an egg scramble with spinach, ham, and lots of cheese and hot sauce. It was so tasty, I made the same thing the next morning!
Today, I was back on the sweet train and tried a new to me product from FlapJacked.
Protein pancakes in the apple cinnamon flavor.
It was really simple to make – just add water and mix. The stats and ingredients are pretty good.
My first one ended up breaking because I wasn’t patient enough, but I got the hang of it shortly after that.
I added more water than the recommended amount (1 cup) because the batter seemed to too thick and they still turned out pretty fluffy.
A stack of little pancakes! Yum!
I added pb and sunbutter to mine because the flavor of the pancakes alone was really light. I think adding fresh blueberries to the batter would have been lovely.
